From a sage’s attempt to return his king into heaven, to the survival of a pregnant woman thanks to the shapeshifting ability of her lord into a coconut tree no less, the Cocos Nucifera is a member of the palm tree family with tales and folklore dating back thousands of years. It is by no means a coincidence that this perennial plant is labelled the “tree of life” and “the tree of a thousand uses”, amongst many other names, because of its tremendous amount of applications all through civilization. Considered one of the most useful trees in the world, one of its many fascinating origins can be traced back to the East Indo-Pacific region and more specifically, Indonesia, the home of IMC Organic Coconut Sugar.

The story behind the production of IMC Organic Coconut Sugar, which derives from the coconut sap, is as intriguing as the myths and legends behind the coconut plant itself. This sap is extracted from the buds of inflorescence where the flowers of the coconut tree grow into fruit. At IMC, a careful harvesting process called tapping, encourages the tree to release this incredible sap without interrupting the cycle of sap production and healthy tree growth. Through the natural and unrefined process of heating, the sap’s moisture is reduced to become sugar granules. An important point to note is that all IMC Organic Coconut Sugar is made from natural sap extracted directly from the coconut tree instead of sugar blocks. This allows our product to achieve the highest quality possible.

Similar to the maple syrup, the coconut sap is a clear liquid that gets cooked into a brown toasty syrup without any form of additives through the entire process. It develops a caramel-like flavour, naturally full of vitamins and minerals. Coconut Sugar also contains a fibre called Inulin, which slows glucose absorption. This explains its low glycemic index property, making IMC Organic Coconut Sugar the perfect alternative with its clear health advantages over many other forms of sugar.

In the next episode of our series, we will be going through our meticulous process which allows us to bring this sustainable product to the world.

IMC Organic Coconut Sugar is proudly certified by USDA Organic and EU Organic, FairTrade, and BRCGS.
