The story behind the production of IMC Organic Coconut Sugar, which derives from the coconut sap, is as intriguing as the myths and legends behind the coconut plant itself. This sap is extracted from the buds of inflorescence where the flowers of the coconut tree grow into fruit. At IMC, a careful harvesting process called tapping, encourages the tree to release this incredible sap without interrupting the cycle of sap production and healthy tree growth. Through the natural and unrefined process of heating, the sap’s moisture is reduced to become sugar granules.
